TOMATOES STUFFED WITH MINCED MEAT

This stuffed tomato dish is simple, delicious, and can help with weight loss if you use lean meat, use less oil, and eat less rice or skip the rice altogether.  It doesn’t take too long, but compared to Italian pasta, I still find pasta to be the fastest!

3. Fish sauce: Fish sauce is a staple in many Asian cuisines, known for its strong umami flavor. It is made by fermenting fish with salt, which creates a rich, salty seasoning. Fish sauce is a good source of essential nutrients like protein and minerals such as calcium and magnesium. It adds depth and complexity to dishes, enhancing their overall flavor profile. The fermentation process also produces beneficial probiotics, which support gut health. It’s commonly used in marinades, dressings, and as a seasoning in a variety of dishes, contributing both taste and nutritional value.

  • Fresh red tomatoes
  • Minced pork (use lean pork if you're on a diet)
  • Chopped onion, garlic (into small cubes)
  • Salt
  • Pepper
  • Cilantro
  • Fish sauce
  • A pinch of tapioca flour or cornstarch (I use 1 tablespoon of flour for about 300g of minced meat)

Cách làm
  • Marinate the meat with half of the chopped onion and garlic, along with salt, pepper, sugar, fish sauce, and tapioca flour. Cover and refrigerate for about 1 hour.
  • Cut the tomatoes in half and use a spoon to scoop out the pulp, as shown in the video clip.
  • Stuff the meat mixture into the tomatoes.
  • Heat a pan, add a little cooking oil, and briefly fry the stuffed tomatoes until the meat is slightly golden (it doesn’t need to be fully cooked).
  • Transfer the tomatoes to a plate.
  • Sauté the remaining onion and garlic, then add the chopped tomatoes, a little water, and season with salt and sugar.
  • Add the stuffed tomatoes back into the pan, cover, and simmer for about 15 minutes until the meat is cooked.
  • Serve hot with white rice.
  • For a low-carb option, skip the rice and serve with steamed vegetables. :) Wishing everyone effective weight loss.
